Science Advance: Health Literacy, Self-efficacy, Food Label Use, & Diet in Young Adults


ACTSI pilot award recipient and ACTSI investigator Eun Seok Cha, PhD, MPH, MSN, RN along with Kevin H. Kim, PhD; Hannah M. Lerner; Colleen R. Dawkins, MS, RN, RD; Morenike K. Bello, BS; Guillermo Umpierrez, MD; and Sandra B. Dunbar, DSN, RN, FAAN, FAHA authored a paper in the American Journal of Health Behavior that examines relationships among health-literacy, self-efficacy, food label use, and dietary quality in young adults aged 18-29. They found that self-efficacy and health literacy were predictors of food label use, which positively predicted dietary quality. From this, they determined that strategies to enhance health literacy, self-efficacy, and food label use should be developed to improve dietary quality and health outcomes.
